This Week In The Chef's Case: Orange Chipotle BBQ Pork Tenderloin

Our Chef's Case is a mix of old favorites and new creations, made daily by a talented staff of Professional Foodies. This new feature of our website is designed to give you a sneak preview of what to expect, beyond our staples (Hills Own Ohio Beef Meatloaves, Twice Baked Potatoes, Hills Own Famous Ham Salad, etc.)

Kyle, one of the owners, says our Orange Chipotle BBQ Pork Tenderloin is an "oldie but goodie." This pork tenderloin is smoky and sweet with a little bit of spice. We'll have it in our Chef's Case until Sunday. Pick some up for dinner; leftovers make great sandwiches.

New at The Hills: 3 Spring Salads

Spring is officially here, and there are several signs of the season in the store. Woody's Morels in the produce department and the bright colors in the Chef's Case make us want to sit outside and sip deck wines.

We have three new "Hills Own" salads making a regular rotation in the Chef's Case this Spring. Read below for details.

Italian Marinated Veggies: This mix of raw chopped veggies in a zesty Italian dressing makes a bright and healthy side dish for any Spring or Summer meal.

Southwest Corn Salad: Roasted sweet corn, lime, cilantro, tomatoes and onion come together to tickle your taste buds. Use as a salad or a topping for your fish tacos or quesadillas.

Asian Chicken Salad: Chicken, shredded broccoli, green onion and peanuts are tossed in a sesame dressing. This light salad is ready to jump from our case onto your plate.

This week, Jen is creating a Traditional Chicken Cacciatore. This version of the traditional Italian dish features Gerber chicken, chopped onions, tomatoes and large meaty mushrooms. Stop by the Chef's Case between now and Sunday to grab a taste of this slowly-simmered dish.

This week, Jen's creating a Traditional Veal Marsala every day for the Chef's Case (avilable until next Wednesday). She's pulled out her mother's recipe for this veal scaloppine sautéed with mushrooms and Marsala. Garnished with herbs and freshly cracked black pepper, this makes a lovely dinner on the deck with a glass of red wine.

Good Gratin

The kitchen is busy pumping out dainty finger sandwiches, chocolate cheesecakes and miniature crab cakes for a catering order for this afternoon. But that didn't stop them from coming up with delicious summer dishes for the Chef's Case. I came across this beautiful medley of vegetables and announced to Mandy that her creation will not only end up being my lunch, but will be the subject of today's blog entry.

This vegetable gratin is made up of fresh eggplant, zucchini, squash, roma tomatoes, asparagus, shredded parmesan, leeks, shallots, olive oil and salt and pepper. Although it is a "secret recipe," Mandy suggests that just about any combination of summer vegetables can work together to create a colorful vegetable gratin.
